When I serve this recipe at parties, they are gobbled up. Sometimes, I place a bowl of spaghetti sauce next to the meatballs for a little dipping. A small, inexpensive food processor is great for chopping up vegetables.
1 lb. ground beef (grass-fed, preferably)
1 lb. ground pork (raised with care)
½ onion minced
½ cup fresh basil
1/2 cup fresh parsley, finely minced
1 c. spinach, finely minced
½ c. almond flour
1 t. dried oregano
4-6 cloves of garlic, minced
Sea salt, ground black pepper.
Mix all of the above ingredients together. Roll into balls about the size of golf balls (or smaller) and cook for around 25 minutes at 350. Thanks to Dr. Kevin Merigian for this recipe!

Will definitely try this but tonight am out of pork~so its now on the grocery list 🙂 I was looking for a meatball recipe using almond flour or coconut flour as I am new to lo carb/keto friendly alternatives and this recipe sounds really good.
