Genie Deviled Eggs
I double or triple this recipe. These eggs vanish in the fridge.
6 eggs
1/4 cup mayonnaise (preferably, Duke’s brand)
1 teaspoon yellow mustard
¼ t. onion powder
Salt and pepper to taste
Crack egg shells. Slice the eggs in half lengthwise, removing yolks to a bowl, and placing the whites on a serving platter. Mash the yolks (I use my mini-food processor for everything!) Add mayonnaise, mustard, onion powder, salt, and pepper, and mix well.
Put heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.

I top with either capers or crumbled non-nitrate bacon. YUM! I never used to like deviled eggs, but now I love them.
