Genie Chicken Enchiladas
Mmmmmm….this is comfort food! You won’t feel like you’re on a diet. But wait until you are a “3” and then only eat until you are a “5” because these are high-calorie (but very low carb and low sugar!)
2 pound of skinless, boneless chicken (free range preferable), cut in every little pieces.
Olive oil/ butter
1 cup diced onions
3 cloves of garlic, minced
Can of chopped green chilis
Package of Taco seasoning mix
Cream cheese, 4 oz.
Shredded cheese, 8 oz or more
Large cabbage leaves to substitute for tortillas
Saute the chicken in an olive oil/butter mixture, along with the diced onions and minced garlic until done. Then add the can of chopped green chilis and a package of Taco seasoning mix. Cook 3-5 minutes more. Add the cream cheese and shredded cheese.
Put some of the mixture in a cabbage leaf and roll up. Put these rolls in a baking dish (sprayed with Pam) and add more shredded cheese.
Bake covered at 350 for 25-30 minutes (take foil off for last 5 minutes).
Serve with this awesome Paleo Mexican Sauce:
½ cup mustard
Stevia equal to 1⁄2 cup sugar
1⁄2 cup Olive oil
1⁄3 cup white vinegar
1 teaspoon oregano
4 green onions, chopped
For Toppings: Choose from chopped romaine, chopped tomatoes, chopped scallions, more shredded cheese, homemade or store-bought Salsa, a dab of sour cream (unless you’re eliminating dairy), and most importantly, the Paleo Mexican Sauce!
