Genie Taco Salad

I always double or triple this because my family likes the leftovers for lunch the next day. (Our boys like chips with their Taco Salad. I can’t find taco shells I like (that don’t have janky ingredients in them) so the boys use On the Border Cantina Thins as a base.) The Paleo Taco sauce below makes this recipe sing. You can make a large batch of the sauce and store it.

Ingredients:

Brown 1 pound of Ground Beef (preferably grass-fed)

Add ½ cup water

Add Taco seasoning mix (below) to your family’s taste. You can make a bunch of this and store it in air-tight containers.

Taco Seasoning Mix: 1 tablespoon chili powder, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon crushed red pepper flakes, 1/4 teaspoon dried oregano, 1/2 teaspoon paprika, 1 1/2 teaspoons ground cumin, 1 teaspoon sea salt, 1 teaspoon black pepper.

For Toppings: Choose from chopped romaine, chopped tomatoes, chopped scallions, shredded cheese, homemade or store-bought Salsa, sour cream (unless you’re eliminating dairy), and most importantly, the Paleo Taco Sauce (!):

Paleo Taco Sauce:
½ cup mustard

Stevia equal to 1⁄2 cup sugar

1⁄2 cup Olive oil

1⁄3 cup white vinegar

1 teaspoon oregano

4 green onions, chopped
