Genie Crab-Stuffed Shrimp

Okay, I agree that this is pricey. But, it’s great for a special birthday or a romantic Valentine’s dinner.


1 12 lbs jumbo shrimp, deveined (wild-caught)

3 T butter

1 stalk celery, diced fine

2 cloves of fresh garlic, minced

12 cup butter, melted

¼ cup of almond flour

1 tablespoon fresh parsley, chopped

3 tablespoons chicken broth

8 oz. of crab meat

2 tablespoons lemon juice

salt and pepper to taste

Preheat oven to 350°F. Sauté the celery and garlic for 3-4 minutes on low heat in the butter. Do not brown. Take this off stove and then stir in the rest of the melted butter, almond flour, crab meat, lemon juice, parsley, chicken broth, and season with salt and pepper. (If this mixture is too runny, add a little more almond flour. If it is too dry, add a little more broth.) Cut almost through each shrimp and flatten out, cut side up. Drizzle just a tad of butter on each shrimp. Place the stuffing on the shrimp. Bake for around 30 minutes.

Fancy stuff! You will look like a gourmet cook.
