Genie Quiche
This recipe is simply quiche without a crust. If you search the internet, you can find a zillion recipes for a grain-free crust. I frequently find myself in a hurry before dinner time, so I just spray the pie pan with Pam and add the following mixture. Btw, there are abundant quiche recipes all over the internet. This recipe has quite a few calories (calories do count!) so I eat a small piece of this and also eat a huge salad and/or a bowl of soup. And, real men do eat quiche.
8-10 slices bacon, non-nitrate. (Sometimes I use ground sausage that is raised with care from a nearby Amish community)
1/2 cup chopped onion, sautéed in drippings from bacon or sausage
5 eggs, beaten
1 1/4 organic heavy whipping cream
1/4 t salt
Dash ground nutmeg (optional)
1 1/2 cups shredded Swiss cheese (any cheese will do)
1 T. almond flour
Pepper to taste
Cook bacon or sausage. Set aside. Cook onion in the bacon/sausage drippings until tender. Stir together eggs, whipping cream, salt, and nutmeg. Add bacon, onion, cheese, pepper, and flour. Mix and pour into pie plate. Bake in the 325 degrees F oven for 50 to 55 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.
Sometimes I add broccoli, asparagus, etc. to this to add fiber and nutrients.
These are nice for appetizers at a party. I use a mini-muffin pan.
