Genie Broiled Chicken Kabobs

Below is a basic recipe for a kabob, but you can do different things with this recipe. For example, add some “Jerk” seasoning or add different vegetables. The grilled kabobs taste so yummy. Sometimes I substitute steak for the chicken.

¼ cup olive oil

Stevia to equal ½ teaspoon of sugar

1/3 c of soy sauce

¼ t. pepper

4 boneless chicken breast halves, cut into bite-size cubes

2 cloves garlic, minced

2 yellow onions

2 red bell peppers, cut into bite-size chucks

1 lb. of mushrooms

Mix together oil, stevia, soy sauce, and pepper. Before adding chicken and veggies to the marinade, reserve a small amount to brush onto kabobs while cooking. Place the chicken, garlic, onions, mushrooms, and peppers in the marinade, and marinate in the refrigerator at least 2 hours. Discard marinade and thread chicken and vegetables onto a skewer. Grill outside for 12 to 15 minutes, or until done. Turn and baste often with marinade. For the non-dieters in the house, I put this on a bed of brown rice, cooked in my rice cooker.
